The year 2019 has been a game-changer year for me. Not only was I able to start and work on this blog, but it also was an eye-opener for me in terms of how much the content creation industry has evolved.
Being a stay-at-home-mother for four years has changed me inside out. There have been very bad phases sometimes (the stress it comes with is not easy to explain) and lots and lots of amazing moments. I am going to cherish those memories for the lifetime. But, this has also given me an opportunity to think beyond a regular 9-to-5 job which I had been doing for 8 years. I had been very comfortable doing that, had I not got a chance to explore this creative side of mine because of the career break.
Writing has always been my passion. Since childhood, I loved to fill diaries with pages and pages of my thoughts and feelings, but growing up, that habit got buried under a lot of responsibilities. The blogging platform has made me revisit those memories of mine, and I am forever grateful to God to have bestowed me with that chance again. The parenting and lifestyle section of the blog is filled with lot of emotions and love.
The love for baking started very late in my life, but there is no looking back for it ever. My house always smells of freshly baked homemade cookies, and they have been the best creations of my kitchen in 2019. I am looking forward to have a more structural approach to my blog in 2020. 1. Classic Chocolate Chip Cookies – With Whole Wheat Flour
This has been the favorite and most frequently baked recipes of all times at my home. My daughter’s love for these cookies is immeasurable. Sometimes I struggle to try some new cookies, as I end up finishing my ingredients baking these beauties. LOL. But these classic chocolate chip cookies are the most loved recipe of 2019, and the most tried recipe too. A lot of fellow moms have tried this one for their kids, and I have got just compliments for the same. This is a very healthy bake because of the use of whole wheat flour and jaggery powder, in place of refined flour and refined sugar respectively. So, go ahead and give this one a try, because you’ll never have enough of this.
2. Whole Wheat Chocolate Banana Cake – Healthy, Moist & Yummy
2019 has been a year of cookies mostly, but there were few other bakes which were well appreciated by all. One of them is this cake, the whole wheat chocolate banana cake. As mentioned above, my bakes are mostly done using whole wheat flour and cane sugar/jaggery powder these days. And this cake is no exception. In fact, I consider this a more healthy option as it is a butter-free and an oil-free bake. The texture of the cake is amazing and it is very moist because of the addition of banana and yogurt in it. I am sure your taste buds are going to thank you for this healthy cake. Add some Chocolate Ganache on top if you want to use it for the party. But all in all, it is an indulgence, or rather, a healthy indulgence.
3. Whole Wheat And Finger Millet (Ragi) Chocolate Cookies
Whole wheat sweet indulgences are the most frequently baked in my kitchen. But there was a time when I wanted to play with other flour options too. And Finger Millet Flour (Ragi) was one such flour which I had been using since my child was born. Be it in the form of savory or sweet pancakes, or the regular chapatis at home, or in other bakes, like cakes. Here I have tried using Ragi flour in chocolate cookies. Finger millet is considered a superfood since it is an excellent source of calcium and iron. It is also gluten-free, which makes it great for those trying to lose weight. I have used this flour along with whole wheat flour here, to create very basic chocolate cookies. Love this one for its simplicity!
4. Eggless Butter-less Classic Chocolate Chip Cookies – With Whole Wheat Flour
Now that experiments using whole wheat flour and jaggery powder were not enough, I had to try the version of chocolate chip cookies (the top post of 2019) which had no egg and no butter. I had got many queries on how to make the classic chocolate cookies into an eggless bake, so I wanted to experiment with that version. But then, another part of me wanted to go one step further, making this bake a completely healthy one, by removing butter altogether from this recipe. Though the texture of classic chocolate chip cookies is no match, but this version is great for those who are trying to look for healthier options. I have used Chia Seeds and Avocado here, replacing egg and butter in the original chocolate chip cookies recipe. This one is definitely worth a try.
5. Eggless Whole Wheat Banana Blueberry Cake – Super Moist And Healthy
For those following my posts definitely know my love for Trader Joe’s products by now. We visit the store frequently for their semi-sweet chocolate chips and their dried berries (like blueberries, blackberries and cranberries). These things are a go-to for a lot of my bakes. This cake recipe here is also made using their dried blueberries. And as always, it is a healthy version because of using whole wheat flour and jaggery powder. Bananas and yogurt lend the cake a beautiful texture, you can definitely give this one a try.
