Eggless Apple Cinnamon Cake {Whole Wheat, One Bowl Recipe}

Try this Eggless Apple Cinnamon Cake, made with whole wheat flour and jaggery powder. The combination of apples and ground cinnamon imparts the perfect balance of sweet, spicy and woody flavors, this eggless apple cake is definitely worth it!
In a bowl, add oil and jaggery powder and mix them thoroughly. Add yogurt and vanilla essence and mix again.
Using a sieve, sift whole wheat flour, baking soda, baking powder, salt and ground cinnamon, and add to the wet ingredients mixture.
Gently fold dry ingredients over the wet ingredients. Do not over-mix at this stage. Add chopped apples and fold again.
Grease a standard loaf pan (8 1/2 x 4 1/2 inches) with some oil and dust with whole wheat flour. Preheat oven to 350°F (or 180°C). Pour batter in the greased and dusted loaf tin.
Bake in the preheated oven for around 55 minutes or till the cake is done (when the inserted toothpick comes out clean).
Remove the cake from the oven and allow it to cool before slicing and serving.
The Eggless Apple Cinnamon Cake is ready to be relished. Serve it warm or store it in the refrigerator and use within a week.

Notes
You can use organic coconut sugar in place of jaggery powder. These alternatives provide healthier form of sweetener to the baked goods.
Do not over mix the batter after adding dry ingredients.
