Eggless Chocolate Chip Cookies (With Whole Wheat Flour)

Try these Eggless Chocolate Chip Cookies, Indian Style, which are made with whole wheat flour and jaggery powder. The egg is substituted here with Flax egg, which is made by mixing Flaxseed powder with water. A delicious eggless dessert for sure!
In a small bowl, add 1 tablespoon Flaxseed powder and 3 tablespoons water.
Mix them thoroughly and keep aside for 15 minutes. Meanwhile continue with the cookie dough preparation part. Flaxseed gel will be ready in 15 minutes.
After 15 minutes, stir the ingredients, you will see a gel like consistency formed, this is the Flax egg, which is now ready to be used in the recipe.
COOKIES PREPARATION
Preheat oven to 375°F (190°C).
In another bowl, mix butter and jaggery powder till completely blended.
Add Flaxseed gel (prepared in first step) and vanilla extract and mix.
Add whole wheat flour, baking soda, baking powder and salt and fold gently with the wet ingredients. Do not over-mix!!
Add chocolate chips and fold gently with the cookie dough.
Make cookie dough balls using 1-2 tbsp dough, flatten and place on parchment paper lined baking tray.
Bake in preheated oven for 12 minutes or till you see creases on top of cookies.
Remove from oven and allow to cool for 5-10 minutes.

Notes
You can use organic coconut sugar in place of jaggery powder. These alternatives provide healthier form of sweetener to the baked goods.
Do not over-mix the cookie dough after adding dry ingredients. Just fold the dry ingredients with wet. (VERY IMPORTANT)
After mixing ground Flaxseed with water, allow the gel formation for at least 15 minutes, before adding the gel in the recipe.
