Here’s presenting a new form to the recently posted Masala Scrambled Eggs recipe. The bhurji is always a win-win when it comes to lazy breakfast mornings, and also, when you want to whip up something quick for breakfast.

How about giving another makeover to the bhurji and if you have some leftover rice (or if not, you can just cook some plain rice separately), then with just the addition of few sauces, you will have a yummy lunch available to you within no time.

If you have seen my Masala Scrambled Eggs recipe, then you must have noticed that the bhurji is loaded with nutrients because of the inclusion of additional vegetables. This is the reason I have not added any more vegetables to the fried rice.

The good part is, all the three added vegetables, onions, bell peppers and spinach, are fried rice friendly and also make the meal more wholesome. All the ingredients together provide adequate amount of vitamins, iron, anti-oxidants and magnesium (to name a few), this makes it a nutrition-packed meal.

Masala Scrambled Egg Quesadillas

Procedure to make Masala Scrambled Egg Fried Rice

  • Keep aside leftover rice, or make fresh plain rice from scratch
  • Prepare the egg mixture or if already prepared, use the leftover
  • Heat egg mixture in a pan
  • Add in the sauces (soy sauce, sriracha and tomato ketchup)
  • Add in the rice and mix it all together
  • Drizzle some balsamic vinegar on top
  • Serve hot

Masala Scrambled Egg Fried Rice

Ingredients

For Masala Scrambled Eggs:

  • Eggs – 4
  • Butter – 1-2 Tbsp
  • Onion (diced) – 1 (Large)
  • Sweet Peppers – 4 (diced)
  • Spinach leaves – A handful (chopped)
  • Salt – To taste
  • Black pepper powder – A pinch
  • Red chili powder – A pinch
  • Coriander powder – 1/3 tsp
  • Sesame seeds – 1/3 tsp
  • Italian seasoning/Mixed herbs – 1/3 tsp
  • (Optional) Green chili/Jalapeno – 1 (finely chopped)
  • (Optional) Cilantro/Coriander leaves – To garnish (chopped)

For Fried Rice:

  • Leftover cooked rice – 3 cups (If no leftovers available, you can make fresh)
  • Egg Mixture – 1-2 cups (Prepared with ingredients mentioned above for Scrambled Eggs or use leftover)
  • Tomato Sauce/Tomato Ketchup – 1/2 Tbsp
  • Sriracha sauce – 1/2 Tbsp (Increase as per spice level)
  • Soy Sauce – 1/2 Tbsp
  • Balsamic Vinegar – A drizzle

Directions

For Masala Scrambled Eggs Preparation:

  1. Heat a non-stick skillet/pan and add the butter.
  2. Once the butter is melted, add in the chopped green chili/jalapeno (if using) and diced onions.
  3. Saute onions for few minutes till they are golden brown in color.
  4. Now add in the diced sweet peppers and saute again for a minute. We don’t saute it for too long as we want to preserve some crunch in the peppers.
  5. Add in the chopped spinach and saute for half a minute.
  6. Add salt and rest of spices (black pepper powder, red chili powder, sesame seeds, coriander powder, Italian seasoning and minced garlic) to the veggie mixture and saute for few more seconds to mix in the spices.
  7. Now, one by one, break the eggs in the pan.
  8. Slowly start stirring the eggs.
  9. You have to keep stirring constantly to create the perfect egg scramble, otherwise the eggs can stick to the bottom of the pan and give a burnt taste.
  10. After 2-3 minutes, a homogeneous mixture starts to form, and then you can turn off the stove.
  11. (Optional) Garnish with chopped cilantro/coriander leaves.

For Masala Scrambled Egg Fried Rice:

  1. Heat a non-stick pan/skillet and add in the egg mixture.
  2. Add the sauces (soy sauce, tomato sauce and sriracha sauce).
  3. Keep stirring everything for few seconds till all the sauces are coated evenly on the egg mixture.
  4. Add the cooked rice to the egg mixture.
  5. Stir everything once again on low heat till there is a homogeneous mixture and rice is coated well with the sauces.
  6. Drizzle balsamic vinegar on top and switch off the flame.
  7. Quick Masala Scrambled Egg Fried Rice is ready to be relished hot!!
