Aloo Puffs | Indian Bakery Style Aloo Patties
These Indian style Aloo puffs or Potato Puffs, made using the Pepperidge Farm Puff Pastry sheets, can be relished at breakfast time, or these are even a great option to have as evening snacks with a hot cup of tea.

Main Ingredients & Substitutes
- Frozen Puff Pastry Sheets
- Feel free to use whichever brand of puff pastry sheets are available with you. I have used Pepperidge Farm puff pastry sheets, since these are easily available at grocery store near me. You can even use pre-cut small pastry squares, which thaw faster than the big pastry sheets.
- Boiled potatoes
- You can replace the boiled and mashed potatoes with crushed paneer if you don’t like potatoes.
- Neutral vegetable oil
- I have used Avocado oil, but feel free to use any neutral flavored vegetable oil.
- Spices & Seasonings
- Add as listed, to get the closest taste as per the recipe.
- Green chili
- Optional, if you want to skip the spice. Add more if you like it spicy.
- Ginger garlic paste
- Gives that kick of pungent and zingy flavor to the patties.
- Schezwan Chutney
- Again optional, but my favorite flavor addition!
- Lemon Juice
- Lemon juice is used to add the tang to the potato filling.
- Splash of water
- Just a little bit of water is needed after you add the spices to prevent burning.
- Milk
- To use as milk-wash for glazing the puff pastries.
- Coriander leaves (for garnish)
- Use if available, to garnish the prepared potato filling mixture!
How to make Indian Style Potato Puffs at home (Step-by-step instructions)
- Thaw the frozen puff pastry sheets as per package instructions. Meanwhile, for the filling, heat oil in a pan and add hing, jeera, saunf and dhaniya seeds to it. Once it all splutters, add split green chilies to it. Saute for a few seconds.


- Add ginger garlic paste and saute again. Now, add the spices (salt, coriander powder, turmeric powder, garam masala, chaat masala and red chili powder) and mix.


- Add a tablespoon of water and mix again. Add mashed potatoes and mix them evenly with the masalas.


- Add the dried and crushed kasoori methi to the potatoes, along with schezwan chutney and lemon juice. And give it a final mix.



- Finally, sprinkle some chopped coriander leaves, mix, and switch off the flame. Keep aside the filling for later use.


- Preheat the oven to 400°F (200°C). Take the thawed pasty sheet, unfold it carefully, spread some flour on your kitchen surface (where you want to prepare the puffs) and lightly dust both sides of the sheet. Cut it into 9 (3*3) equal squares as shown in the picture.


- For making one puff, take one square and roll it from all sides using a rolling pin (For measurement idea, I rolled the square from ~3 inches to a 4-5 inch square for final use). Apply milk wash using a pastry brush to the 4 sides of each pastry square (on the side facing up). Add ~1 tbsp of filling on one side of each sheet.



- Fold the pastry sheets into a rectangle. Then, using a fork, create a design on the folded sides. Place all the rectangular pastry sheets on the baking tray lined with parchment paper.


- Finally, apply milk wash on top part of all the prepared pastry rectangles. Bake them in the preheated oven for around 20-25 minutes. Once done, remove the baking tray from the oven.


Notes
- Feel free to use whatever brand of pastry sheets you have available with you.
- Check the pastry sheets after 30 minutes of thawing and use them immediately, otherwise they become difficult to handle.
- To store the other frozen pastry sheet, wrap the sheet tightly in a plastic wrap or a ziplock bag and freeze until next use.

- 1 tbsp Oil
- 3 Boiled potatoes medium, mashed
- 2 tbsp Coriander leaves chopped
- Hing (Asafoetida) a pinch
- 1/2 tsp Jeera (Cumin seeds)
- 1/2 tsp Saunf (Fennel seeds)
- 1 tsp Dhaniya seeds (Coriander seeds)
- 1 Green Chili slit
- 1 tsp Ginger garlic paste
- 1/2 tsp Haldi (Turmeric powder)
- 1 tsp Coriander powder
- 1/4 tsp Red chili powder
- 1/2 tsp Garam masala
- 1/2 tsp Chaat masala
- Salt to taste
- 1/2 tbsp Dried Fenugreek Leaves (Kasuri Methi)
- 1 tbsp Water
- 2 tsp Lemon juice
- 2 tsp Schezwan chutney optional
- 4 tbsp Milk For milk wash
