Kesar Badam Overnight Oats

These Indian inspired Kesar Badam Overnight Oats are made with the goodness of rolled oats, almond milk, yogurt, kesar (saffron strands), ground cardamom, chopped almonds and chia seeds. This one is a healthy festive Indian meal prep breakfast!

Ingredients
  

  • 1/2 cup Rolled Oats I used old fashioned rolled oats by Quaker Oats
  • 1/2 cup Almond Milk You can use milk of your choice, almond milk would taste amazing for this recipe.
  • 1/4 cup Yogurt
  • 1/2 tbsp Honey You can also substitute Maple Syrup with this.
  • 1/4 tsp Ground Cardamom (Elaichi powder)
  • 1/2 tbsp Chia seeds
  • 2 tbsp Chopped Almonds for topping
  • Kesar (Saffron strands) a pinch
  • 1 tbsp Chopped Pistachios optional, for topping

Instructions
 

  • In a 12 ounce (~ 350 ml) glass jar, add all the ingredients.
  • Mix well and refrigerate overnight.
  • In the morning, enjoy the overnight oats straight from the jar, or in a bowl.
  • Optionally, add toppings of your choice. I used chopped almonds and chopped pistachios.

Notes

  • Other toppings that go well with the Kesar Badam Overnight Oats are dried rose petals, nuts like chopped cashews, dried fruits such as raisins or dried cranberries etc.
  • A 12 ounce (12 oz) wide mouthed glass jar works great for one serving of overnight oats, especially if you want to eat right out of jar in the morning. It is enough to hold the overnight oats, and also has space for some additional toppings.
