 “Good morning lord, it’s a beautiful day! Good morning lord, I’m going your way!”. It was so lovely to see my kid repeating these words in the recent online classes with her school friends and teachers. Loved this part of Shelter-In-Place where we were able to get to see how beautifully the students bond with their teachers over prayers and story-telling sessions (Just trying to find some positivity at this time of COVID-19). To be honest, I’ve been enjoying listening to stories more than my kiddo. LOL!

On a different note, summer is here. And so are the summer clothes. It’s a relief getting the extra layers of winter clothes off and enjoying the beautiful summer dresses. I’m sure that’s the best part about summer for many of us.

Coming to the essence of this blog post, this one is all about the cake which is inspired from my sister-in-law’s one of regular bakes. It’s a double chocolate cake which is fluffy, soft and extremely delicious. This cake has been adapted from two recipes, one by Pinch Of Yum and other by Smitten Kitchen. Its an amalgamation of both the successful recipes, made into a healthy bake!

I am not a big fan of frostings when it comes to baking cakes every now n then, so I have skipped that part completely. The major changes that I have made to what the original recipes have called for, are completely replacing the all-purpose flour with whole wheat flour, and the second one is replacing the sugar with jaggery powder. So, this is my version of the mix of original recipes with whole wheat and jaggery powder. And I am pretty sure next time I make this again, I’m definitely going to try it with the frosting (making it a bit healthier as I always try). For now, enjoy the cake recipe!

How to make Whole Wheat Double Chocolate Cake

For starters, this is a one-bowl chocolate cake recipe, which means not using two or more bowls for dry and wet ingredients, and miscellaneous tasks. Everything gets done in one bowl, so cleaning process simplified!

  • This recipe starts with adding chocolate chips to the bowl, and pouring hot coffee on top of the chips and let it rest for 5 minutes.
  • Then, whisk everything together and add melted butter, jaggery powder, vanilla, eggs and buttermilk.
  • Again, mix all the ingredients together.
  • Now add all the dry ingredients, that is, whole wheat flour, baking powder, baking soda, cocoa powder and salt.
  • Again, whisk everything together until a smooth batter is formed.
  • Bake at 350 degree F in a preheated oven for around 30-35 minutes, or till the cake is done.
  • Remove from the oven, let it rest for 5-10 minutes, take it out of the cake tin and enjoy the soft chocolatey goodness!

A very simple recipe, using healthy ingredients, and definitely delicious!

Important Notes

  • This recipe uses 1/2 cup of Buttermilk. If you don’t have ready buttermilk available, the you can make your own buttermilk at home by using milk and lemon. Check out this post by Sugar Spun Run where Sam beautifully and clearly explains how to make buttermilk from scratch at home. I bet you will love reading this article just like I did.
  • If you want to do the ganache, you can check both the original recipes, and use either of the frosting (Both are different, basic difference being one uses cream and the other uses milk). You can go with the one you like from these, or you may use some other favorite ganache recipe of yours.

Whole Wheat Double Chocolate Cake

Ingredients
  

  • 1/4 cup Butter unsalted, melted
  • 3/4 cup Jaggery powder
  • 1 Egg
  • 2 tsp Vanilla Extract
  • 1 cup Whole wheat flour
  • 1/4 cup Cocoa powder
  • 3/4 tsp Baking soda
  • 3/4 tsp Baking powder
  • 1/2 tsp Salt
  • 1 tsp Instant coffee
  • 1/2 cup Water
  • 1/2 cup Buttermilk
  • 1/4 cup Chocolate Chips Semi-Sweet

Instructions
 

  • Preheat oven to 350 degree F.
  • Meanwhile, boil water in a pan and add the instant coffee to the boiling water.
  • Now take the chocolate chips in a bowl and pour the hot coffee water over them. Let it sit for around 2-3 minutes.
  • Using a whisk, mix the melted chocolate chips with hot coffee.
  • Now add melted butter, jaggery powder, vanilla extract, eggs and buttermilk to the chocolate chips mixture.
  • Whisk everything together till all the ingredients are uniformly mixed, will not take more than a minute. Wet ingredients mixture is ready.
  • Now add the dry ingredients (whole wheat flour, cocoa powder, salt, baking powder and baking soda) to the wet mixture. Mix everything together. I would recommend that if you are using electric mixer, beat it for 2-3 minutes on medium speed. If you are beating by hand using a whisk, you can beat everything for around 5-7 minutes.
  • Pour the batter into a 9 inch round greased and dusted cake pan and bake in pre-heated oven for around 30-35 minutes, or till the cake is done (when the toothpick inserted in the center comes out clean).
  • Once done, remove the pan from oven. Allow the cake to cool for around 5 minutes before removing it from pan.
  • Enjoy the healthy and delicious double chocolate whole wheat cake!
