Soft Healthy Funfetti Cookies From Scratch – Healthy Sprinkle Cookies {Holi Special Cookies}

Made with a healthy combination of whole wheat flour, unrefined cane sugar along with a drizzle of rainbow sprinkles, these healthy sprinkle cookies are definitely going to win your heart!!
The Inspiration
What comes to your mind when you see these colorful and joyful cookies? Rainbows and unicorns are what my daughter would immediately say. But, to me, these playful colors remind me of Holi. Yes, Holi, the famous Indian festival. Holi is fondly called as “The festival of colors”, and is celebrated across India to signify the victory of good over evil. It also signifies the arrival of spring.
Holi is celebrated with people showering powdered colors on each other, smearing each other’s faces with those beautiful hues. Everyone plays joyfully, splashing water on one another and getting drenched in the water. Holi is a celebration of love, laughter, forgiveness and friendship. Though the celebrations have greatly reduced over time, but the spirit of the festival still remains intact. Celebrating the same spirit today, I have baked these colorful Holi Cookies aka Healthy Funfetti Cookies. These cookies also serve as a great option for healthy birthday cake cookies. The little ones will definitely have a great time baking these cookies with colorful rainbow sprinkles. These would serve as amazing party favors for!
How are these Homemade Funfetti Cookies healthier than the boxed ones?
Whole wheat baking has been the essence of my blog, and I have not used any refined flour anytime to bake my cookies. Every other week I bake a batch of cookies for my home (since our consumption of store bought cookies has almost come to an end), so I prefer to bake them the healthier way. The white flour is replaced with whole wheat flour, and the refined sugar has been replaced with unrefined cane sugar or jaggery powder.

For those who don’t know, I had started this project last year, under which I had planned to post 100 recipes from my kitchen by the end of the year 2019. My whole wheat cookie baking journey started with a recipe of the Classic Chocolate Chip Cookies recipe, and there has been no looking back since that day. I have been using that recipe as a foundation to create more and more cookie recipes. I owe my cookie baking skills to that. Again, I am using that recipe as a base again for this Funfetti bake.
Which sprinkles should I use to make these healthy birthday cake cookies?
For the Funfetti, I have used the store bought ready Funfetti mix. You can either use the sprinkles alone or you can even mix it with your choice of Nonpareils. You will be able to easily find these in any supermarket or grocery store in baking aisle. I have mixed in the sprinkles in the cookie dough and baked the cookies. These cookies surely remind of a party of rainbows and unicorns. You can even plan to bake them for your little one’s birthday party. These are definitely going to win the little hearts big time!

Healthy Funfetti Cookies Method (Step-by-step with pictures)
- Preheat oven to 375 degree F. Meanwhile, mix the butter and unrefined cane sugar (jaggery powder) till the sugar is completely blended with the butter. I prefer to mix by hand since I don’t use mixer. Whisk or spatula is not helpful in this case, since the butter is not in a completely melted state.
- Add in the egg to this mixture. Now add vanilla essence to the above mixture and stir till all the ingredients are uniformly mixed. The wet ingredients mixture is now ready.
- For the dry ingredients, mix in whole wheat flour, baking soda, baking powder and salt to the wet mixture.
- Finally add the Funfetti mixture and give it a good mix with hand. The dough will be a little loose at this stage, so it is advisable to put the dough in the fridge for at least 5-10 minutes.
- Remove the cookie dough from the refrigerator. Line a baking tray with parchment paper. Take around 1-2 tbsp of dough in your hands, form a ball, and flatten a little. I was able to make 13 cookies with the prepared dough.
- (Optional) Using the extra 1/2 Tbsp sprinkles, I sprinkled each cookie with 5-10 Funfetti sprinkles on top and pressed them a little to fix them on top of the cookie. You can skip this step if you want.
- Bake the cookies for around 12-15 minutes in the preheated oven, or till you see creases on top of the cookies. The cookies will be soft to touch, but once cooled, they will be fine. Remove the cookies from the oven, and allow them to cool for at least 5-10 minutes.
The colorful Funfetti Whole Wheat Cookies are now ready to be served. Also, these can be stored in an air-tight container. Let the party begin!

Notes
- Whole Wheat Flour β Feel free to replace whole wheat flour with the same quantity of all-purpose flour. If the cookie dough feels a little loose, add ~ 1/4th cup more of all-purpose flour.
- Unrefined cane sugar β If Unrefined cane sugar is not available, you can replace it with equal amount of refined sugar.
- Egg β To make the recipe eggless, I would advise to replace the egg with either of these two options:
- Chia Seed Gel (Mix 1 Tbsp powdered Chia seeds with 3 Tbsp water, and let it soak for 5 minutes)
- Flax Seed Gel (Mix 1 Tbsp powdered Flax seeds with 3 Tbsp water, and let it soak for 5 minutes)
