Healthyish Banana Muffins No Sugar Recipe – With Almond Flour

This Healthyish Banana Muffins No Sugar Recipe is a healthy dessert option and also works great as gluten free breakfast muffins. Sweetened with jaggery powder (can be substituted with organic coconut sugar) and made with almond flour, these are perfect sugar free banana muffins.

It’s raining Almond Flour these days. Well, getting a big pack of Blanched Almond Flour from Costco made it possible. This is my second recipe on the blog related to Costco almond flour recipes. The first one was the perfect fall muffin recipe aka The Almond Flour Pumpkin Muffins. This time I tried making Gluten Free Banana Muffins with Almond Flour.

To tell you the truth, my experiments have not been limited to just muffins, but I also did try Almond Flour Cookies, which have not yet come up to the blog as it was a baking disaster (as far as I think) since the cookies spread way too much. Though, my Fam (my husband and daughter) said that those were the best cookies they ever tasted, duh!

Because of too much spreading, the cookies became crunchy and were actually baked to perfection in terms of crunchy cookies (though I didn’t plan on baking them crunchy). But yes, the taste was on point. That experiment is going to help me now get on to the next trial, and I hope I get the perfect almond flour cookies recipe out for you soon. Let’s focus on our gluten free muffins till then.

How are these Almond Flour Banana Muffins healthy?

These gluten free banana muffins are made with healthy ingredients like almond flour and jaggery powder, which makes this as one of the healthy gluten free baking recipes.

Almond flour is a low-carb flour option and is high in Protein, Vitamin E and Magnesium, which makes it very nutritious. Jaggery powder is used as a sweetener in this recipe, which I have generally been using in my bakes in place of refined sugar. Jaggery powder acts as a healthier substitute for refined sugar for healthy baked desserts. You might need to do a bit of trial and error before perfecting baking with powdered jaggery.

Almond Flour vs Almond Meal! What to use to make these Healthyish Banana Muffins?

Almonds in the ground form comes in two varieties. One is Almond meal & the other is Blanched Almond flour. As the name suggests, Blanched Almond Flour is made from blanched almonds which have the skin removed and then they are ground to fine powder. Almond meal is basically powdered almonds, which are ground with the skins on, so it is more coarse. I have used the Kirkland Signature Superfine Blanched Almond Flour from Costco. I have not tried this recipe with Almond meal, so please do let me know if you try it.

Substitutions & Tips For Almond Flour Sugar Free Banana Muffins

  • Jaggery Powder โ€“ If Jaggery Powder is not available, you can replace it with equal amount of Organic Coconut Sugar or Unrefined Cane Sugar.
  • Chocolate Chunks โ€“ You can swap the chocolate chunks with equal amount of semi-sweet chocolate chips or chopped nuts of your choice. Or even better, just skip them completely to create perfect healthy sugar free breakfast muffins.
  • Donโ€™t over mix the batter. Over-mixing may result in air pockets which get formed on top and inside of the baked goods. I would advise to gently fold in the batter till you see a uniform mixture being formed.
  • The muffin batter will not be runny like the usual white or wheat flour muffin batters. So, please refrain from adding more liquid ingredients to it.

Step by step process to make the Healthyish Muffins No Sugar Recipe

  • Mash the bananas in a bowl. Now add jaggery powder, eggs, oil and vanilla extract. With a hand whisk, mix everything together till all the ingredients are properly blended. Do not over-mix. The wet ingredients mixture is now ready.

  • To the wet mixture, add blanched almond flour, baking soda, salt, ground cinnamon and ground nutmeg. Again, mix everything together till you see a smooth blended mixture and there are no lumps seen. Please make sure not to over-mix.

  • Now add the semi-sweet chocolate chunks to the muffins batter and mix everything together again.

  • Preheat oven to 350 degree F (i.e. 180 degree Celsius). Scoop out 2-3 tablespoons of mixture and pour into the lined or greased muffin cups (To grease the muffin pan, rub the muffin cups with little oil and then optionally, lightly dust each individual cup with a little flour). I was able to make 12 muffins in total.
  • Once the oven is pre-heated, bake the muffins in the oven for around 25-30 minutes or till the muffins are done using the toothpick test, that is, when the inserted toothpick in the muffin comes out clean (I got my muffins ready in exactly 27 minutes). Remove the muffins from the oven, and allow them to cool for 5-10 minutes.

The Healthy Gluten Free Almond Flour Banana Muffins are ready to be served warm, or these can be stored in an airtight container in the refrigerator for a week!

Ingredients
  

  • 2 Bananas
  • 1/3 cup Jaggery Powder
  • 1/4 cup Oil I used Avocado Oil for this recipe, use any vegetable oil that you have
  • 3 Eggs
  • 1 1/2 tsp Vanilla Extract
  • 2 cups Blanched Almond Flour
  • 1 tsp Baking Soda
  • 1/2 tsp Salt
  • 1/2 tsp Ground Cinnamon
  • 1/4 tsp Ground Nutmeg
  • 1/2 cup Semi-Sweet Chocolate Chunks You can even use same amount of Semi-Sweet Chocolate Chips here

Regarding your question, I have not tried the eggless version of this recipe, and since gluten free flours are more dense and not that easy to work with, I would suggest you to try replacing the eggs with flax eggs.
