Diwali Muffins & Rasmalai Trifle

Diwali Muffins & Rasmalai Trifle is one of those Indian fusion recipes, that can be prepared ahead of time (an hour before serving works best), and is a very easy and delicious party dessert option. For those of you who are following my blog may know that I had recently shared the recipe for Healthyish Diwali Muffins.
These muffins were full of all the festive flavors, especially those imparted by ground cardamom and rose syrup, along with the crunch in every bite given by chopped almonds, pistachios and cashews. The healthyish part was given by using whole wheat flour instead of white flour and also with the use of organic coconut sugar in place of white sugar.
Here in this trifle recipe, I have made layers of crushed muffins and crushed Rasmalai pieces respectively. And I have topped it all off with few tablespoons of Rasmalai milk. An hour of refrigerating it ensures that all the layers get soaked in the Rasmalai milk, which makes the trifle really soft, and completely melt-in-mouth.

How did this Diwali Trifle Pudding recipe come to my mind?
Well, the Diwali Muffins were already prepared, and had made their way to the blog. Also, we had just bought the Nanak Rasmalai pack from Costco, as part of the regular Diwali shopping. So, it was just that the idea clicked about using the leftover muffins, and giving them a new form to consume.
Luckily, I was planning on making some trifles as part of the Indian sweet dishes for the festival season, and I saw a post on Instagram by one of my favorite bloggers. Her Instagram handle is jetlaggedjalebi, go check out her Instagram page for amazing recipes and DIYs. The Diwali muffins and Rasmalai seemed to be the perfect options for the same. And that’s how this recipe was formed, and it did not disappoint at all!
I made this recipe around three to four times even before the actual day of Deepavali. The trifle was so so good, that my daughter was not even ready to wait for the photography. I had to click her with the trifle bowls to finish the photo shoot, LOL!
Diwali Muffins & Rasmalai Trifle Ingredients, Substitutions & Method
You just need these Ingredients for making the trifle in the individual trifle bowls:
- Diwali Muffins
- Rasmalai Pieces
- Rasmalai Milk
The following substitutions can be made to the recipe:
- Muffins – If you don’t have Diwali muffins prepared beforehand, just use any other neutral flavored muffins (non chocolate would be better). I would recommend simple vanilla muffins or some form of mixed nut muffins.
- Rasmalai – I have used ready-made Nanak Rasmalai pack from Costco. But feel free to use either homemade or any other store bought Rasmalai pack.
- Add-ons – You can also add some nuts and/or dried fruits in the trifle layers. Also, feel free to top the trifle off with some whipped cream or saffron strands.
Quick & Easy Trifle Method (Step-by-step with pictures)
- Crush one Diwali Muffin and keep aside. To the individual trifle bowl, layer half of the crushed muffin. Crush two Rasmalai pieces and layer on top of the muffin layer.
- Top the Rasmalai pieces layer with the remaining half of the crushed muffin. Finally, top off all the layers with 2-4 tablespoons of Rasmalai milk (the more the better).
- Repeat the above steps for preparing another trifle bowl.
- Refrigerate both the trifle bowls for an hour or more, and serve cold.

Diwali Muffins & Rasmalai Trifle
Ingredients
- 2 Diwali Muffins Can be substituted with any other neutral muffins
- 4 Rasmalai pieces I used the Nanak Rasmalai pack from Costco
- 8 tbsp Rasmalai milk
Instructions
- Crush one Diwali Muffin and keep aside. To the individual trifle bowl, layer half of the crushed muffin.
- Crush two Rasmalai pieces and layer on top of the muffin layer.
- Top the Rasmalai pieces layer with the remaining half of the crushed muffin.
- Finally, top off all the layers with 2-4 tablespoons of Rasmalai milk (the more the better).
- Repeat the above steps for preparing another trifle bowl.
- Refrigerate both the trifle bowls for an hour or more, and serve cold.
