Coming up this time is the recipe of the very basic and yummy double chocolate muffins. These days I am into the basic recipes spree, and I want to try the very popular and simple healthy baking recipes before I move on to some complicated bakes.
Speaking of the recipe, the eggless chocolate muffins are made in a healthy way. I have used whole wheat flour and jaggery powder as the base, just like many other recipes from this blog. So, this one is a no refined flour muffins recipe. And also, it is a no added refined sugar muffins recipe as well, since jaggery powder is considered a healthier sugar alternative, as it is a form of unrefined cane sugar (very popular in India). I am also able to easily find jaggery powder in almost all of the Indian Stores here in Bay Area, California!
The eggless muffins recipe has been adapted from the recipe of these Double Chocolate Muffins by Sally’s Baking Addiction. While Sally has beautifully used eggs in her original recipe, I have replaced those eggs with yogurt. Also, I have replaced all purpose flour with whole wheat flour, and also, granulated sugar has been substituted with jaggery powder. So, this is kind of healthyish version of the original recipe. I am sure the original recipe must be having an amazing flavor, and so does this eggless one!
The Eggless Double Chocolate Chip Muffins are!
- Healthy
- (Added) Refined Sugar Free
- Refined Flour Free
- Egg Free
- Super easy to make
What can I use to substitute eggs in muffins?
While there are many options for replacing eggs, these whole wheat chocolate muffins have been made by replacing eggs with yogurt. If you see the original recipe, it calls for 2 large eggs in the recipe. But I have used extra yogurt (1/4th cup yogurt replaces each egg) in this recipe.
Other famous egg replacers for muffins are unsweetened applesauce, banana, ground flax seeds or chia seeds. Apart from these, you can also find some commercial egg replacers in the market.
