Holiday season or not, hot chocolate is a forever favorite thing! And if you end up baking cookies with the hot cocoa mix, then there’s nothing better than that.
Wait, wait, wait. Yes, there’s an even better thing. What if those cookies don’t have any added refined flour or refined sugar? Well, definitely that’s an added bonus! These cookies are made with healthier ingredients like whole wheat flour and organic coconut palm sugar, which makes these one of the best holiday cookies ever.
Also please don’t expect some gooey marshmallows inside these since I have avoided that part in this particular recipe, but the holiday touch is imparted with Red & Green M&M’s and a white mini marshmallow on top. I top the mini marshmallow once the cookies are freshly baked and just taken out of the hot oven.
Ingredients & Substitutes
- Butter
I have used unsalted butter here. If you plan to use salted butter, then just skip the salt mentioned in the recipe ingredients. Also, don’t forget to use softened butter here. More details on what is softened butter and other baking queries from the blog can be found in the Baking FAQs post. Don’t forget to check that out for baking related questions.
- Organic coconut sugar
Coconut Palm Sugar is a healthier sweetener option compared to the refined sugar. It is derived from the sap of coconut palm tree, so it is a plant based sweetener with a distinctive flavor.
- Whole Wheat Flour
Whole Wheat Flour is a healthier substitute for the refined flour or all-purpose flour that is used normally for baked goods.
- Hot Chocolate Mix
I used Swiss Miss Milk Chocolate Flavor Hot Cocoa Mix, you can use any brand of Hot Chocolate Mix available with you.
- Egg
Egg acts as a binder in these cookies, and also helps the cookies rise. If you want to avoid egg in the recipe, you can substitute the egg with either of these two options:
- Chia Seed Gel (Mix 1 Tbsp Chia seeds with 3 Tbsp water, and let it soak for 5 minutes)
- Flax Seed Gel (Mix 1 Tbsp Flax seed powder with 3 Tbsp water, and let it soak for 5 minutes)
- Chocolate Chips
I am using Semi-sweet chocolate chips here, as they render the perfect amount of chocolatey sweetness, but you can even use a mix of semi-sweet and dark chocolate chips if you prefer.
- Toppings – Holiday M&M’s and Mini Marshmallows
I have topped the cookies with Red & Green M&M’s and one mini marshmallow on top. These give the perfect holiday look (a hint of red, green and white, for the Christmas touch) to the cookies.
- Other Ingredients
The other ingredients in the healthy holiday cookies recipe include vanilla extract, baking soda, baking powder and salt.
How to make the healthy hot cocoa cookies?
- Mix the butter and coconut sugar till everything is completely blended.
- Add in the egg and vanilla extract to the above and again mix everything together.
- Add whole wheat flour, hot chocolate mix, baking soda, baking powder and salt to the wet mixture and mix everything.
- Now add semi-sweet chocolate chips and mix again. Optionally, refrigerate the cookie dough for around 15-20 minutes.
- Remove the cookie dough from the refrigerator. Line a baking tray with parchment paper. Preheat oven to 375 degree F (or 190 degree Celsius). Take around 1 – 2 tablespoon of cookie dough in your hands, form a ball and flatten a little and repeat for all cookies. Top the cookies with Red and Green M&Ms.
- Bake the cookies for around 10-12 minutes in the preheated oven, or till you see creases on top of the cookies. The cookies will be soft to touch, but once cooled, they will be fine.
- Remove the cookies from the oven, and immediately top them with one mini marshmallow each.
- The Healthy & Soft Hot Chocolate Cookies are now ready to be served warm, or these can also be stored in an air-tight container for around a week.
Tips & Notes
- You can add more M&M’s and mini marshmallows on top of cookies if you like.
- You can substitute organic coconut palm sugar with jaggery powder.
- Do not over mix the dough after adding dry ingredients.
- I did not add marshmallows inside the cookie dough as I didn’t want the gooey texture of cookies created by baked marshmallows.
