Nutella Brownie Cookies

These Nutella Brownie Cookies do not just taste amazing, but are also made with healthier ingredients, like whole wheat flour and jaggery powder. The texture of these cookies is what makes them unique. These are completely melt in mouth from inside, just like a bite of brownie. Feel free to swap Nutella with a healthier Chocolate Hazelnut Spread.

Ingredients & Substitutes

  • Butter

Use softened butter to make these cookies. Softened butter means that when you press the butter with your finger, it should easily make an indentation, but shouldn’t be in a melted state. Also, I prefer to use unsalted butter. But if are using salted butter, then just omit the extra salt listed in the recipe ingredients.

  • Nutella

Nutella plays the key role for flavor and brownie like texture in this recipe. But if you want to make it healthier, you can substitute it with a healthy Hazelnut chocolate spread.

  • Whole Wheat Flour

Whole Wheat Flour is a healthier substitute for the refined all-purpose flour used normally for making baked goods.

  • Jaggery Powder

Jaggery Powder is a healthier sweetener option compared to the refined sugar. It is made from the sap of palm or sugarcane. If jaggery is not available, then you can use other unrefined option like coconut palm sugar.

  • Egg

Egg acts as a binder in these cookies, and also helps the cookies rise. If you want to avoid egg in the recipe, you can substitute the egg with either of these two options:

  1. Chia Seed Gel (Mix 1 Tbsp Chia seeds with 3 Tbsp water, and let it soak for 5 minutes)
  2. Flax Seed Gel (Mix 1 Tbsp Flax seed powder with 3 Tbsp water, and let it soak for 5 minutes)

If using these substitutes, also increase baking powder in the recipe by additional 1/2 teaspoon.

  • Cocoa Powder

I have used unsweetened cocoa powder in this recipe. You can also use Dutch processed cocoa powder or Cacao powder as a substitute here.

How to make Nutella Brownie Cookies

Here is a step by step process to make these delicious Brownie Cookies with Nutella!

  • Mix butter and jaggery powder till blended.

  • Add vanilla extract and egg. Mix again.

  • Add Nutella and mix.

Wet ingredients mixture ready.
  • Using a sieve, sift whole wheat flour, cocoa powder, baking soda, baking powder and salt, and fold into wet ingredients. Refrigerate the dough for 30 minutes.
Dry ingredients sifted into the batter.
Final cookie dough.
  • After 30 minutes, remove the cookie dough from the refrigerator. Preheat oven to 375°F (190°Celsius). Make cookie dough balls using 1-2 tbsp dough, flatten (but just a bit) and place on parchment paper lined baking tray. Bake in preheated oven for 12-14 minutes. Remove from oven and allow to cool for 5-10 minutes before serving.

Notes

  • You can use organic coconut sugar in place of jaggery powder.
  • Do not over mix the cookie dough after adding dry ingredients.

Ingredients
  

  • 1/2 cup Butter unsalted, softened
  • 3/4 cup Jaggery powder
  • 1 Egg
  • 1 tsp Vanilla Extract
  • 1 1/2 cups Whole wheat flour plus 2 Tbsp
  • 1/2 tsp Baking soda
  • 1/2 tsp Baking powder
  • 1/2 tsp Salt
  • 2 Tbsp Unsweetened Cocoa Powder
  • 1/4 cup Nutella

Instructions
 

  • Mix butter and jaggery powder till completely blended.
  • Add vanilla extract and egg. Mix till you see a smooth batter. Add Nutella and mix again.
  • Using a sieve, sift whole wheat flour, cocoa powder, baking soda, baking powder and salt, and fold into wet ingredients mixture. Refrigerate the dough for at least 30 minutes.
  • After 30 minutes, remove the cookie dough from the refrigerator.
  • Preheat oven to 375°F (190°Celsius). Make cookie dough balls using 1-2 tbsp dough, flatten (but just a little bit) and place on parchment paper lined baking tray.
  • Bake in preheated oven for 12-14 minutes.
  • Remove from oven and allow to cool for 5-10 minutes.
