Paneer Corn Sandwich
Try this quick and easy recipe of Paneer Corn Sandwich. Perfect for breakfast, and also works great for kids school lunchbox. Made with the goodness of crumbled Paneer, sweet corn kernels and crunchy capsicum, this sandwich is super easy to prepare.

Main Ingredients
- Paneer (Cottage Cheese)
- Paneer or Indian Cottage Cheese is the main ingredient of this easy recipe. You can substitute it with Tofu.
- Sweet Corn
- Boiled sweet corn kernels add a little sweetness to the sandwich. And in general, sweet corn complements the taste of paneer, helping balance the flavors in the sandwich.
- Veggies (of choice)
- I am using green capsicum here. The other options for vegetables include red/yellow peppers, grated carrot, grated beetroot, spinach etc.
- Spices & Condiments
- These include salt, coriander powder, chaat masala, red chili powder and kasuri methi. I would say kasuri methi (dried fenugreek leaves) imparts a beautiful aroma to the sandwich, but you can skip it if you are using fresh fenugreek leaves.
How to make Paneer Corn Sandwich
Here are the step by step instructions on how to make the delicious toasted paneer sandwich!
- In a bowl, add crumbled paneer, sweet corn and capsicum. Add salt, coriander powder, chaat masala, red chili powder and kasuri methi, and mix everything together. Take 2 bread slices and apply mayonnaise on one side of both the bread slices. Add 4-6 tablespoon of prepared paneer corn mixture on one slice and place the other bread slice on top of the mixture.
- Heat a tawa or non-stick pan on low-medium flame. Grease with butter and place the prepared sandwich on the tawa and toast it. Flip and toast the other side. Keep toasting till both sides are done.
- Repeat for all sandwiches.
Substitutes & Tips
- If you want to avoid Paneer in this recipe, you can try replacing it with the same amount of crumbled Tofu.
- You can add more veggies of choice, like sliced red or yellow bell peppers, grated carrots etc.
- Feel free to add chopped green chilies or red chili flakes as per your spice level liking.
- This recipe makes 6 to 8 sandwiches, depending on the size of the bread. I made 6 sandwiches, since I used large sized sourdough bread slices. My favorite is this Extra Sourdough bread by Francisco International. I find it perfect for sandwiches.

Paneer Corn Sandwich
Ingredients
- 1 cup Paneer crumbled
- 1/2 cup Sweet corn
- 1/2 cup Capsicum
- Salt to taste
- 1/2 tsp Coriander powder
- 1/4 tsp Chaat Masala
- 1/4 tsp Red Chili Powder
- 1/2 tbsp Dried Fenugreek Leaves (Kasuri Methi)
- 6 tbsp Mayonnaise
- 12 Bread slices
- Butter for greasing tawa/pan
Instructions
- In a bowl, add crumbled paneer, sweet corn and capsicum. Add salt, coriander powder, chaat masala, red chili powder and kasuri methi. Mix everything together.
- Take 2 bread slices and apply mayonnaise on one side of both the bread slices.
- On one bread slice (with mayo side up), add 4-6 tablespoon of prepared paneer corn mixture. Place the other bread slice (with mayo side inside) on top of slice with mixture.
- Heat a tawa or non-stick pan. Grease with butter and on low-medium flame, place the prepared sandwich on the tawa and toast it. Also apply butter on the top side of the sandwich.
- Flip and toast the other side. Keep toasting till both sides are brown and done.
- Repeat for all sandwiches.
- Serve hot with favorite sauce, dip or chutney!

- I have used green capsicum here. You can also use red or yellow bell peppers.
