The eggless baking series continues. I am having a lot of fun trying out various eggless bakes, especially the simple recipes. These eggless banana chocolate chip muffins have definitely become one of our most favorite recipes. These muffins are not only moist and delicious, but also made in a healthy way using healthier flour and sweetener alternatives, like whole wheat flour and jaggery powder.
If you don’t have access to jaggery powder, then you can easily substitute it with organic coconut sugar. It is a very easily replaceable alternate to jaggery powder, and you maintain the health quotient as well. I have tried interchanging both these sweeteners in many of my bakes, and you can substitute them in 1:1 ratio.

The eggless muffins recipe has been adapted from the recipe of the Eggless Banana Cake from the blog. I’ve been loving baking with bananas lately. And also looking forward to trying them out with more and more fruit combinations, of course, keeping the base of the bake healthier. But if you are specifically looking for a recipe of eggless banana muffins with yogurt, then this is what you need!
