Eggless Tutti Frutti Cake | Bakery Style Fruit Cake
This Eggless Tutti Frutti Cake is made with colorful candied fruits, whole wheat flour and jaggery powder. Tutti Frutti Cake is one of the most loved bakery style tea-time cakes in India. Trust me, it’s so good that you will make this delicious loaf cake over and over again!

Main Ingredients & Substitutes
- Jaggery Powder
Jaggery is an unrefined form of sugar, which comes from sugarcane or sap of palm, and retains it’s nutrients during processing. If Jaggery Powder is not available, you can replace it with equal amount of Organic Coconut Sugar.
- Whole Wheat Flour
Whole wheat flour or Atta is a better substitute to the refined flour that is normally used in baking.
- Yogurt
Yogurt is generally used as a substitute to egg in baking. I have used the plain whole milk yogurt, but feel free to replace it with plain Greek yogurt.
- Tutti Frutti (Candied Fruit)
Tutti Frutti or candied fruits (made with generally watermelon rind or papaya) is the main ingredient in the recipe, and cannot be substituted!
- Butter
I have used unsalted butter here. If you plan to use salted butter, then just skip the salt mentioned in the recipe ingredients.
- Other Ingredients
The rest of the ingredients in this recipe include baking soda, baking powder, salt and vanilla extract.

How to make Bakery Style Eggless Tutti Frutti Cake
- Preheat oven to 350°F (180°C). Meanwhile, add melted butter to a bowl and add jaggery powder, and mix them thoroughly.



- Add yogurt and vanilla extract, and mix again.


- To the wet mixture, add whole wheat flour, baking powder, baking soda and salt.
- Fold everything gently with spatula.


- Add Tutti Frutti and fold again.


- Pour the cake batter into a parchment paper lined loaf pan. Optionally, sprinkle some Tutti Frutti on top.
- Bake in the preheated oven for around 45-50 minutes or, till the cake is done.

Ingredients
- 1/4 cup Butter unsalted, melted
- 3/4 cup Jaggery Powder
- 1 tsp Vanilla Extract
- 1 1/2 cup Whole Wheat Flour
- 3/4 tsp Baking soda
- 3/4 tsp Baking powder
- 1/4 tsp Salt
- 1 cup Yogurt (Dahi)
- 1/2 cup Tutti Frutti
Instructions
- Preheat oven to 350°F (180°C). Meanwhile, add melted butter to a bowl and add jaggery powder, and mix them thoroughly.
- Add yogurt and vanilla extract, and mix again.
- To the wet mixture, add whole wheat flour, baking powder, baking soda and salt.
- Fold everything gently with spatula. DO NOT OVER-MIX.
- Add Tutti Frutti and fold again.
- Pour the cake batter into a parchment paper lined loaf pan.
- Optionally, sprinkle some Tutti Frutti on top.
- Bake in the preheated oven for around 45-50 minutes or, till the cake is done.
- Remove the cake from the oven and allow it to cool before serving.

Notes
- You can use organic coconut sugar in place of jaggery powder. These alternatives provide healthier form of sweetener to the baked goods.
- Do not over mix the batter after adding dry ingredients.
